Pastaflor Argentina and Mexican Tortilla Soup

So I am trying to keep up with my new idea of cooking at least one new thing every week. This week I made two because I am on vacation.


Pastaflor is a food I first tried while living in Encarnacion, Paragauay with my dear friend Mirta.  I still need to learn to make the dough. I am currently living in Santa Cruz, Bolivia and I have found I can buy the dough already made. Here is my first attempt. It looks and taste very similar to a quiche however the dough is more flaky and you have an upper and lower crust.




I made mine with
3 eggs
chopped spinach
tomatoes
milk
cheese Bolivian plus mozzarella
mix together and put in between dough
cook until golden

I've notice a trend I have. When I am homesick I eat Mexican food.
Here is a healthier option for tortilla soup.

chicken
black beans
garbanzo beans (keeps the flavor but a better option than corn)
Pasta (whole wheat if possible)
squash
green pepper
tomatoes
garlic
onions
cumin
salt and pepper
water
whole wheat tortillas

I simple boiled all the ingredients. Starting with the chicken, onions, garlic and water. Slowly added the other veggies until mostly cooked. Last added the pasta.
Once done I topped my cup with pieces of cooked tortilla.

Great for eating in cold rainy weather.
